Steamed Pork Buns
Spanish Bread
You Need:
For Dough:
500g or 4 cups All Purpose Flour
7g or 2 1/2 tsp Instant Yeast
100g or 1/2 cup Butter
200ml or 1 cup Milk
80g or 1/2 cup Sugar
5g or 1 tsp Salt
20ml or 2 Tbsp Oil Vegetable Oil or Cooking Oil
3 Eggyolk
For Filling:
100g or 1/2 cup Butter
80g or 1/2 cup Sugar
8g or 1 small pack Vanilla Sugar
60g or 1/2 cup Breadcrumbs
extra Breadcrumbs for coating
Note: you can also coat extra melted butter before you coat breadcrumbs so breadcrumbs will stay in the bread.
Oven Temperature: 160 Degree Celsius Pre-Heated Oven or 320F
Baking Time: 20 mins

INGREDIENTS:
For the dough:
3 1/2 cups all purpose flour
1/2 tsp salt
1/2 cup sugar
2/3 cups milk
2/3 cups water
60 ml or 1/4 cup cooking oil
1 tbsp dry yeast
1 tbsp sugar
Filling:
1/2 cup sugar
1 cup bread crumbs
1/2 cup butter
Bake on a preheated oven at 365 f or 185 c for 15 minutes at least.
No Knead Dinner Rolls
Fast Easy Dinner Rolls
Ingredients:
1 cup warm water( 110 degrees), and 1 teaspoon white sugar dissolved in the warm water
2 packages of active dry “original yeast” (I use Fleischmann’s brand), or 4 1/2 teaspoons of yeast
1/2 cup salted butter melted
1/3 cup white sugar
1 1/2 teaspoon salt
3 eggs
4 1/2 cups bread flour ( I use Gold Medal Brand, or King Arthur)
Combine the water, 1 teaspoon sugar and yeast in a bowl, let it sit at least 5 minutes until the yeast is foamy
In a mixing bowl combine the melted butter, 1/3 cup sugar, eggs and salt and beat with a whisk.
Now whisk in the yeast mixture.
Add the flour 1 cup at a time until all except a 1/4 cup is incorporated.
Put the dough onto a lightly floured surface and knead as shown in the video adding the remaining flour until it is smooth and soft.
Put the dough into a greased large bowl and cover tightly with plastic wrap.
Store in the refrigerator for at least two hours until it has doubled in size, or up to 2 days. When ready to make the rolls,
grease a 9 by 13 inch metal pan. Divide the dough into 24 equal sized pieces and place evenly in the pan, pushing the dough down slightly.
Cover the rolls with plastic wrap and a towel and leave to rise until the rolls are doubled in size, about 1 1/2 hours.
Preheat the oven to 375
bake until golden brown, about 17 minutes. Immediately inver the rolls onto a cooling rack to cool.
Serve warm with butter!

560g / 19¾oz Strong white bread flour
320g / 11oz Lukewarm milk around 40°C / 105°F
1 large beaten Egg: at room temperature
20g / ¾oz / 1½tbls Vegetable or Olive oil
30g / 1oz Sugar
1½tsp Kosher Salt or 1tsp Table salt
10g / 2½tsp instant or active dried yeast, Fresh yeast is 20g / ¾oz
25g / 1oz of melted butter for glazing

Soft Milk Loaf Bread
Ingredients
(210mm x 110mm loaf pan)
(A) Yeast mixture:-
1. 165ml Warm milk
2. 5g ( 1 tsp ) Caster sugar
3. 3g ( 1 tsp ) Instant dried yeast
(B) Dough:-
1. 220g ( 1 1/2 cup ) Bread flour
2. 15g ( 1 tbsp ) Caster sugar
3. 2g ( 1 tsp ) Salt
4. 1 tbsp Milk powder
5. 15g ( 1 tbsp ) Soften butter
Bake in preheated 165°C ~ 190°C oven for 20 ~ 25 minutes.
Baking time & temperature may vary depending on the type and accuracy of oven. You may need to adjust your oven temperature accordingly.

Banana Bread
1 banana
Dry Ingredients:
1 cup flour
1 tsp baking powder
1/2 tsp baking soda
1/2 salt
1/2 cinnamon

white sugar and brown sugar
Then mix the banana using spatula

Puto Mais
- 1 Cup all purpose flour
- 1/2 Cup corn starch
- 1 Tablespoon baking powder
- 3/4 Cup sugar
- 3/4 Cup evaporated milk
- 1/2 Cup cream of corn (in can)
- 2 Tablespoon vegetable oil
- Food coloring
- Fill the pot with enough water so that is just barely reaches the bottom of the steamer basket, bring to a boil.
- Once water boiled, turn the heat to low. Put the steaming rack and cover.
- Place flour, corn starch, sugar and baking powder, in a sieve set over a bowl, sift and set aside.
- Add the evaporated milk and vegetable oil to the sifted ingredients, and blend until the mixture is smooth.
- Add yellow food coloring and cream of corn, mix and blend thoroughly until smooth and free of lumps.
- Grease the prepared baking pan and carefully pour the mixture.
- Place the pan into a steamer basket over the steamer and cover with cheesecloth.
- Steam for about 45 minutes or until done.
- This recipe requires 7 1/2 X 2 1/2 round pan.
- Check for doneness by inserting a toothpick into the center of puto, and the toothpick comes out clean.
- Leave 1/3 space at the top when pouring the batter in the pan. This is to give the puto space to expand upon cooking.
- Sift your dry ingredients and always add wet to dry ingredients not dry to wet, to avoid any lumps.
- Make sure that the water in the steamer is boiling, before you put your pans filled with batter.

2 1/2 cup coconut milk
4 cups glutinous rice flour
2 cups water
1 1/2 cup sugar
Mix all then pour into grease pan then steam to 45 minutes.

Mix until well blend. Then cook it in a pot keep mixing it till it doesn't still to the pan.

2 cups Rice washed 3x
2 cups Whole milk
1 cup Granulated Sugar
2-1/2 tbsp baking powder
4 tbsp melted butter
1 whole egg
Procedure:
1 Pour the whole milk into the washed rice let it soaked for 1 hr.
2 Puree the rice and milk mixture using a blender until it become very smooth consistency
3 Add the rest of the ingredients starting with the baking powder mix it using whire whisk until you no longer seeing lumps
4 Strain the mixture
5Grease the puto molds with shortening or butter
6 Pour the batter into the molds half full
7 steam it for 15 to 18 minutes over medium low heat.
Bingka Bisaya
2 cups washed uncooked rice
2 large eggs
3/4 cup granulated sugar
1-14 oz can coconut milk
1/4 tsp salt
3 tsp baking powder

Procedure
1. Wash the rice with water twice
2. Pour the 1 can of coconut milk
3. Soak it for 2 hrs
4.While rice is soaking rinse the banana leaves and dry it with kitchen towel or paper towel and cut it into 7 inches wide put it in the microwave for 30 seconds.
5. Cut it into a circle shape to that it will fit into the baking mold. Line each mold with banana leaves
6. Puree the rice using a blender( i use nutribullet)
7. Pour half of the soaked rice into a blender and add the half of the sugar,1 egg puree it until the mixture become smooth
8. Do the rest of the soaked rice then add the remaining ingredients.baking powder, egg, sugar, and the salt
9. Pour 1/2 cup of the mixture into the mold.steam it for 15 minutes.
10.After 15 minutes switch the layers of the steamer if using 2 layers after switching steam for another 10 minutes.If you only using 1layer of steamer, just steam it for 20 minutes.

Wilted banana leaf, cut in circles
( All in all I used 2 cans of coconut milk)

Mongo Bread
Red Bean Paste
2 1/2 cup Adzuki beans
1 can condensed milk
1/2 cup sugar
Bahug- bahug/ Pan de Pula
2 lbs Old bread cubes
1-14 oz can condensed milk
1 cup Granulated sugar
1 Tbsp Vanilla
Red food coloring
4 cups Milk
1/4 cup Heavy cream (optional)
1/2 tsp Salt
1/2 cup Unsalted butter/1 stick
4 Large eggs
Dough Ingredients:
3 cups Bread flour
1-1/4 cup Warm milk
1/4 cup Granulated sugar
1 Egg
1 egg yolks for egg wash
1 tbsp sesame seeds for the toppings
Procedure: (for the filling)
1) In a large bowl combine everything except for the bread, butter and food color
2) Once everything is well combine slowly pour it to the bread.
3) Cook the filling over medium high heat. Once the mixture is warm enough add in the butter and the food color.its up to you how intense your color. when the mixture has thicken up and no more liquids you can now turn the heat off. And start making the dough.
Procedure: (For the dough)
1) Add 1 tbsp of sugar to the warm milk then add the yeast set it aside until its foam up.
2) Combine the flour and the sugar together.
3) Im using my bread machine to knead my dough. You can use your hand or stand mixer. Knead the dough until smooth and elastic.
4) Greased 9x13 baking pan. Roll out the dough right after you finish kneading make sure it enough to cover the top and the bottom of the baking pan.
5) Once you roll out the dough transfer it to the baking pan covering the bottom first. Add in the filling before covering the top make sure you level it by pushing it with hand or spatula.
6) Cover the top and pinched to sealed the tuck the side in. Using a fork poke some wholes all over and then brush it egg wash and sprinkle the sesame seeds.
7) Bake it at preheated oven 350F for 30 minutes or until the top gets golden brown.
8) let it cool down completely before slicing it.

Homemade White Bread
4 tablespoons of active dry yeast* 1 tablespoon of salt 5 tablespoons of oil lots of flour *note: 1 packet of yeast = 2 1/4 teaspoons (double check your packet), so 4 tablespoons = 12 teaspoons = 5 packets variations: oil: use vegetable, canola, olive, or anything else flour: all purpose (bleached or unbleached) or whole wheat (mix with all purpose 1:1) Bake bread in 375°F oven for 25 minutes. Specifically for ONE loaf it's: 1 cup lukewarm water 1/8 cup or 2 tbsp sugar
1 tablespoon (3 tsp) active dry yeast 3/4 tsp salt 1 1/4 tablespoons oil 2 cups flour (roughly)
This is the recipe of the latest 4 loaves of bread that I made:
Ingredients:
2 cups lukewarm water
4 tbsp white sugar
2 tbsp active dry yeast
1 1/2 tsp salt
2 1/2 tbsp oil
4 cups flour or more till dough is in right consistency
Directions:
1. Mix the yeast and white sugar in 2 cups of water and set it for 10 minutes.
2. Add the rest of the ingredients in the mixing bowl and mix it together.
3. Pour a little flour in the working area and knead the dough.
4. Rub oil in the mixing bowl and put the dough back and cover and let it rest for 1 hour.
5. Pour a little flour on the working area and knead the dough again.
6. Prepare the greased pan.
7. Put on the dough on the greased pan and cover it with towel and let it rest for 30 minutes.
8. Bake it for 375F in 25 minutes.
Ingredients
- 6 to 61/2 Cups of Flour
- 1 Cup of Sugar
- 1/2 Teaspoon Vitamin C Vinegar or Apple Cider Vinegar
- 1 Teaspoon of Salt
- 3 Tablespoons of Butter
- 2 Tablespoons of Yeast
- 1 Cup of Water
- 1 Cup of Milk
- 2 Eggs
Instructions
- Mix the Yeast and 1 Tablespoon of Sugar with half of a Cup of Water and allow the Yeast to Proof for 3 to 5 minutes.
- Add all the ingredients and the proofed yeast (except the butter) inside the Mixing Bowl. Set the mixer to medium speed and begin to mix.
- After about 4 to 5 minutes of mixing the dough, turn off the mixer and add the butter. Then continue to mix for about 2 to 3 more minutes until the dough becomes elastic and pulls away from the sides of the Bowl.
- Coat the dough as well as the Bowl with some Oil, cover it with a damp cloth and place it in a warm place to rise for 1 hour or until it doubled in size. I usually place mine in the Oven with the oven light on.
- Now punch down the Dough. Don't over beat it.
- Transfer it onto a floured work surface and divide the Dough into 4
- Shape your Bread by first making it into a ball, then shape it into a loaf. You can also knead the dough into a rectangular shape with a rolling pin and then tightly roll it up (as you would a Mat) into a loaf.
- Place the loaves into a greased pan and leave to rise for another 30 Minutes.
- Place into a 350 degrees Fahrenheit preheated Oven and bake between 20 to 30 minutes.
- Leave to cool for a couple of minutes and enjoy!
Notes
1-I added Vitamin C Powder. This can also be replaced with Vinegar. This acts as a preservative and it also creates an acidic environment which helps the Yeast to work better.
