Berry Crumble Recipe

Berry Crumble Recipe Preheat oven to 350. In a 9x13 baking dish layer blueberries, raspberries, and strawberries. Cover with ¼ cup white sugar (sweeten to your preference, we like it tart). If you’re using Thrive Life Freeze Dried fruits, cover with water to refresh the fruit. (With regular fruit, let it sit and macerate. The sugar will draw out the juices.) In a medium sized bowl, mix together: 2 cups of uncooked oatmeal ¼ cup of flour ½ cup brown sugar 1 teaspoon of cinnamon dash of salt ½ cup of chopped walnuts Cut in 1 stick of butter until large pea size lumps are left Sprinkle the topping evenly over the fruit Bake at 350 for at least 30 minutes. The topping should be a little crispy and the fruit bubbly. It may take another 10 minutes. Let it cool somewhat. Serve warm or cold (With whipped cream or ice cream is extra good!)

Steamed Pork Buns

Ingredients for the dough(enough to make 12 buns) - 500 grams or 4 cups of all-purpose flour - 250 grams or 1.06 cups of warm water - 3 grams (1 tsp) of yeast - 1 tbsp of sugar Ingredients for the filling - 350 grams of ground pork(sorry for the audio mistake in the video, it should be 350 grams not 300grams) - 1 tsp of grated garlic - 1 tbsp of soy sauce [Amazon Link: https://amzn.to/2TdlvOB] - 2 tsp of oyster sauce [Amazon Link: https://amzn.to/2B7KLis] - 1/2 tsp of salt - 1 tsp of sugar - 1 tsp of dark soy sauce [Amazon Link: https://amzn.to/2Qbjapr] - 2 tsp of sesame oil [Amazon Link: https://amzn.to/2QHNnw7] - 1/3 cup of non-flavored chicken stock - 1/2 cup of spring onion INSTRUCTION Add 1 tsp of yeast into 250 grams of warm water. Make sure it is fully dissolved. In a large bowl, add 500 grams of all-purpose flour, 1 tbsp of sugar. Give it a mix. Pour the yeast water in batches. Use chopsticks to stir it to corporate it well. Then start gathering all the flour together. Make it into a dough. Cover it and let it sit for 1 hour and 40 minutes. This is the first proof. My room temperature is 21 degrees Celsius. You will need to adjust the time depending on the temperature. While the dough is sitting, let’s make the filling. 350 grams of ground pork, add 1 tsp of grated garlic, 1 tbsp of soy sauce, 2 tsp of oyster sauce, 1/2 tsp of salt, 1 tsp of sugar, 1 tsp of dark soy sauce, a drizzle of sesame oil. Add 1/3 cup of non-flavored chicken stock. You just stir the meat for 2 or 3 minutes until the meat absorbs the liquid. By doing this, your filling will turn out incredibly juicy. Add 1/2 cup of diced spring onion. Keep mixing it until it is well combined. You can also add some other vegetables such as cabbage carrot, leek. Set this in the fridge, now let’s check the dough. There are always some signs that will tell you your dough is ready. 1. The size should be about1.8 - 2 times bigger. 2. Softly touch the surface; you can feel that there is a lot of air inside. 3. If you grab the dough and open it up. Inside should look honeycomb shape. 4. I know a lot of people will poke a hole in the middle of the dough, if the hole doesn’t bounce back immediately that means it is ready but I forgot to show you that. Sprinkle some flour to prevent sticky. Put the dough on the working surface and we will start kneading the dough to get rid of all the air bubbles. Grab the dough fold it in half. Press it down against the working surface. Every time you press the dough, make sure you squeeze the dough to push the air out. You should be able to feel and hear that the air bubbles are breaking. I have seen a lot of people just roughly knead the dough for few minutes. The reason I am doing this is that the bubbles from the first proof are always irregular. Once you get rid of them and the second proof will provide you with smaller, fluffier and regular bubbles. You just keep doing this for about 8 minutes. This is how I check if all the air despairs – you just take a knife and cut the dough. If you see there are no big bubbles and the cut surface is pretty smooth. That means it is ready. Shape the dough into a round shape. Poke a hole in the middle. Stretch it to make a big ring. The amount I gave is enough to make 12 pork buns. Flatten it and start rolling it. Use the thumb to hold the middle. right-hand rolls it and left-hand holds and turns it. Repeat this again and again. What you are looking for is a wrapper with thick middle and thin edge. Now let’s wrap the filling. I used about 2 tbsp. the thumb and middle finger go under the wrapper. The forefinger goes on the top. Lift the edge and pinch it to make a pleat. Then use the other hand to help to make pleats. Continue doing this all the way around. One important note is that your thumb never leaves the first pleat. In the end, you twist the pleat and pinch it together to close the bun. Brush some oil on the steamer to prevent sticky. Put the pork bun in. Be sure to leave some space between each other. Cover it and let it sit for another 15 minutes. I put some warm water under the steamer. That helps the second proof. 15 minutes later, turn on the gas to the maximum. Once you bring the water to a boil, keep steaming the pork bun for 15 minutes. Turn off the heat. Do not open the lid for at least 3 minutes or else it will shrink when the cold air hits the pork bun.

You Need: For Dough: 500g or 4 cups All Purpose Flour 7g or 2 1/2 tsp Instant Yeast 100g or 1/2 cup Butter 200ml or 1 cup Milk 80g or 1/2 cup Sugar 5g or 1 tsp Salt 20ml or 2 Tbsp Oil Vegetable Oil or Cooking Oil 3 Eggyolk For Filling: 100g or 1/2 cup Butter 80g or 1/2 cup Sugar 8g or 1 small pack Vanilla Sugar 60g or 1/2 cup Breadcrumbs extra Breadcrumbs for coating Note: you can also coat extra melted butter before you coat breadcrumbs so breadcrumbs will stay in the bread. Oven Temperature: 160 Degree Celsius Pre-Heated Oven or 320F Baking Time: 20 mins

INGREDIENTS: For the dough: 3 1/2 cups all purpose flour 1/2 tsp salt 1/2 cup sugar 2/3 cups milk 2/3 cups water 60 ml or 1/4 cup cooking oil
1 tbsp dry yeast 1 tbsp sugar Filling: 1/2 cup sugar 1 cup bread crumbs 1/2 cup butter Bake on a preheated oven at 365 f or 185 c for 15 minutes at least.

No Knead Dinner Rolls

*note* these have just a hint of sweetness to them, if you prefer less sugar reduce the 1/4 cup to a couple of teaspoons. 1 tbsp dry yeast (2 packets) 1/4 cup white sugar 1/2 cup warm water 600 g / 21 oz by weight flour (about 4 1/2 cups) (I used all-purpose, but you can use bread flour too) plus a little extra for dusting 1 1/2 tsp salt 1 cup warm milk 50 g / 3.5 tbsp unsalted butter, melted and cooled 2 eggs lightly beaten (should be room temperature, but it won't make a huge difference if they are cold) Measure out the 1/4 cup of sugar. Take a tsp measuring spoon and remove 2 tsp from the 1/4 cup of measured out sugar. Put the 1/4 cup of measured out sugar (less the 2 tsp) aside. Combine warm water, the 2 tsp of sugar and yeast. Stir until yeast and sugar are dissolved. Allow to sit and get foamy (about 5 minutes). If you are using instant active yeast, you don't have to let it sit. In a large bowl combine the flour salt and the measured out 1/4 cup sugar (that is missing the 2 tsp). Make a well in the center of the flour mixture and pour the milk in it, as well as the EGGS, melted butter and the yeast mixture. ****NOTE***** I EDITED OUT THE PART WHERE I ADD THE EGGS TO THE FLOUR MIXTURE, BUT I DID PUT THEM IN THERE! SORRY! Stir with a spoon or use a mixer to mix until combined. You will have a very sticky dough. Cover with a damp tea towel and allow to rise until tripled in a warm place. MIne took about 1.5 hours. Examples of warm places: I turn my oven on at 350F for about 2 minutes until the air feel warm inside the oven. I shut the oven off and turn on the oven light. I put the bowl in the warmed oven. Place the bowl on top of the refrigerator. Heat your clothes dryer for a couple of minutes, turn off. Place bowl in warm dryer. Once tripled in volume, punch down dough and scrape it onto the countertop dusted generously with flour. Shape dough into a log shape, dusting with flour to make it less sticky. Cut into four pieces, then cut each of those pieces into three pieces, for a total of 12 portions. Flatten out dough piece with your hand and then bring up edges to center to make a rough circle shape. You want to pull one side (the side that is down) taught so that it is smooth. Place formed roll into a greased 9x13" baking pan or tray that has been covered with baking paper. Cover with a WELL GREASED piece of plastic wrap and allow to rise until a little less than doubled (about 75%) Mine took about 40 minutes. Bake at 390F for about 15-20 minutes until buns are golden brown. Allow to cool in pan for a few minutes and then remove to wire rack to cool completely. These stay relatively fresh for 2-3 day after making them when stored in a covered container. You can freeze the formed dough balls before the second rising. Just defrost, allow to rise to 75% and bake as per recipe.
Fast Easy Dinner Rolls
Ingredients: 1 cup warm water( 110 degrees), and 1 teaspoon white sugar dissolved in the warm water 2 packages of active dry “original yeast” (I use Fleischmann’s brand), or 4 1/2 teaspoons of yeast 1/2 cup salted butter melted 1/3 cup white sugar 1 1/2 teaspoon salt 3 eggs 4 1/2 cups bread flour ( I use Gold Medal Brand, or King Arthur) Combine the water, 1 teaspoon sugar and yeast in a bowl, let it sit at least 5 minutes until the yeast is foamy In a mixing bowl combine the melted butter, 1/3 cup sugar, eggs and salt and beat with a whisk. Now whisk in the yeast mixture. Add the flour 1 cup at a time until all except a 1/4 cup is incorporated. Put the dough onto a lightly floured surface and knead as shown in the video adding the remaining flour until it is smooth and soft. Put the dough into a greased large bowl and cover tightly with plastic wrap. Store in the refrigerator for at least two hours until it has doubled in size, or up to 2 days. When ready to make the rolls, grease a 9 by 13 inch metal pan. Divide the dough into 24 equal sized pieces and place evenly in the pan, pushing the dough down slightly. Cover the rolls with plastic wrap and a towel and leave to rise until the rolls are doubled in size, about 1 1/2 hours. Preheat the oven to 375 bake until golden brown, about 17 minutes. Immediately inver the rolls onto a cooling rack to cool. Serve warm with butter!

Ingredients (210mm x 110mm loaf pan) (A) Yeast mixture:- 1. 165ml Warm milk 2. 5g ( 1 tsp ) Caster sugar 3. 3g ( 1 tsp ) Instant dried yeast (B) Dough:- 1. 220g ( 1 1/2 cup ) Bread flour 2. 15g ( 1 tbsp ) Caster sugar 3. 2g ( 1 tsp ) Salt 4. 1 tbsp Milk powder 5. 15g ( 1 tbsp ) Soften butter Bake in preheated 165°C ~ 190°C oven for 20 ~ 25 minutes. Baking time & temperature may vary depending on the type and accuracy of oven. You may need to adjust your oven temperature accordingly.

Sumang Mais


Puto Mais

  1. 1 Cup all purpose flour
  2. 1/2 Cup corn starch
  3. 1 Tablespoon baking powder
  4. 3/4 Cup sugar
  5. 3/4 Cup evaporated milk
  6. 1/2 Cup cream of corn (in can)
  7. 2 Tablespoon vegetable oil
  8. Food coloring
  1. Fill the pot with enough water so that is just barely reaches the bottom of the steamer basket, bring to a boil.
  2. Once water boiled, turn the heat to low. Put the steaming rack and cover.
  3. Place flour, corn starch, sugar and baking powder, in a sieve set over a bowl, sift and set aside.
  4. Add the evaporated milk and vegetable oil to the sifted ingredients, and blend until the mixture is smooth.
  5. Add yellow food coloring and cream of corn, mix and blend thoroughly until smooth and free of lumps.
  6. Grease the prepared baking pan and carefully pour the mixture.
  1. Place the pan into a steamer basket over the steamer and cover with cheesecloth.
  2. Steam for about 45 minutes or until done.
  3. This recipe requires 7 1/2 X 2 1/2 round pan.
  1. Check for doneness by inserting a toothpick into the center of puto, and the toothpick comes out clean.
  2. Leave 1/3 space at the top when pouring the batter in the pan. This is to give the puto space to expand upon cooking.
  3. Sift your dry ingredients and always add wet to dry ingredients not dry to wet, to avoid any lumps.
  4. Make sure that the water in the steamer is boiling, before you put your pans filled with batter.

Kalamay

2 1/2 cup coconut milk
4 cups glutinous rice flour
2 cups water 
1 1/2 cup sugar
Mix all then pour into grease pan then steam to 45 minutes.

2 cups glutinous rice flour
2 cups coconut milk
1 1/2 cup brown sugar
1 cup ube
1/2 cup water
Mix until well blend. Then cook it in a pot keep mixing it till it doesn't still to the pan.
Kalamay Latik

Steamed Sticky Rice in Coconut Milk

Puto Maya/Putong Malagkit 2C sweet rice 1Tbsp black rice(optional,to add color) 1C canned coconut milk 1thumb-size ginger, crushed 3Tbsp. brown sugar 1tsp. salt *Combine coconut milk,ginger,sugar and salt. *Simmer for 2-3mins. *Strain the mixture and then cool completely. *Add sticky rice and black rice to the mixture. *Soak the sticky rice and coconut milk mixture for at least 4hrs. *Steam the mixture for 30mins to start. *Mix from time to time. *Continue cooking until it is totally cooked. Mine took 1hr.total. Suggestion: You might want to add a 1/4C more of coconut milk to shorten the cooking time.

Banana Steamed Cupcake

Ingredients 2 cups all-purpose flour 2 fully ripe bananas 1 cup fresh milk ½ cup white sugar ½ cup brown sugar 2 tbsp butter, melted 1 tsp baking powder 1 tsp baking soda ½ tsp salt 1 egg Procedure 1. In a mixing bowl mashed banana using fork. Then add milk, melted butter, brown sugar, white sugar and egg. Mix well using wire whisk or hand mixer if available. 2. Add baking soda, baking powder and salt. Add flour on the mixture one at a time and mix batter until well combined. 3. Grease each cupcake mold with melted butter. Then pour-in mixture on each mold. Transfer it to the steamer. 4. Put steamer on top of a pot with boiling water. Steam banana cupcakes on high heat for 15 minutes. 5. Remove from steamer and let it cool.

Rice Puto

Ingredients:
2 cups Rice washed 3x
2 cups Whole milk
1 cup Granulated Sugar
2-1/2 tbsp baking powder
4 tbsp melted butter
1 whole egg
Procedure:
1 Pour the whole milk into the washed rice let it soaked for 1 hr.
2 Puree the rice and milk mixture using a blender until it become very smooth consistency
3 Add the rest of the ingredients starting with the baking powder mix it using whire whisk until you no longer seeing lumps
4 Strain the mixture
5Grease the puto molds with shortening or butter
6 Pour the batter into the molds half full
7 steam it for 15 to 18 minutes over medium low heat.

Bingka Bisaya

Recipe
2 cups washed uncooked rice
2 large eggs
3/4 cup granulated sugar
1-14 oz can coconut milk
1/4 tsp salt
3 tsp baking powder
baking molders
banana leaves
steamer
Procedure
1. Wash the rice with water twice
2. Pour the 1 can of coconut milk
3. Soak it for 2 hrs
4.While rice is soaking rinse the banana leaves and dry it with kitchen towel or paper towel and cut it into 7 inches wide put it in the microwave for 30 seconds.
5. Cut it into a circle shape to that it will fit into the baking mold. Line each mold with banana leaves
6. Puree the rice using a blender( i use nutribullet)
7. Pour half of the soaked rice into a blender and add the half of the sugar,1 egg puree it until the mixture become smooth
8. Do the rest of the soaked rice then add the remaining ingredients.baking powder, egg, sugar, and the salt
9. Pour 1/2 cup of the mixture into the mold.steam it for 15 minutes.
10.After 15 minutes switch the layers of the steamer if using 2 layers after switching steam for another 10 minutes.If  you only using 1layer of steamer, just steam it for 20 minutes.

Broil and Bake

2 Cups rice Washed
2 cans of 14 0z coconut milk
1/2 cup Brown Sugar
1/2 Granulated sugar
3 tsp Baking Powder
2 Large eggs
10 pcs 4x7 Banana leaves
Procedure
1.cook the coconut milk in the sauce pan let it boil for about 20 minutes stirring constantly
2.after cooking the coconut milk pour it to the washed rice and it it soak for 1 hr.
4.while the rice is soaking  lets cut the banana leaves.cut each of them into a circle shape then, lined it to the baking molds.
5.after 1 hr. puree the rice in a blender until smooth consistency. you also gonna add some of the
ingredients too while in the blender.(you can check my video)
6.Divide you batter into the mold you line with banana leaves
7.Broil it in low heat for 15 to 20 minutes or until the top get golden brown.
8.after broiling turn your oven on into 350 degrees and bake it for 30 minutes or when toothpick inserted comes out cleaned.

Using Flour
This bibingka taste good as the rice one. So if you don't have a time to soak and grind the rice then, this recipe for you 😊

ingredients:

1-1/2 cup water
3/4 cup Vegetable oil
1/2 cup evaporated milk
2 large eggs
500 grams or 4 cups all purpose flour
500 grams or 2 1/2 dark brown sugar
20 grams or 1.32 tbsp or 4 tsp powdered milk
2 tbsp baking powder
1/4 tbsp baking soda
1 cup young coconut for toppings/macapuno (optional)

Procedure.
1) Line your baking molds with banana leaves or if you don't have banana leaves you can use parchment paper.

2) Preheat your oven 375 degrees

3) In a big bowl combine your eggs and brown sugar. mix it using wire whisk. Add in the oil, water and evaporated milk and whisk until the sugar has dissolve.

4)Combine all dry ingredients starting with baking powder, powdered milk and baking soda mix using a spatula.

5) Now, add in the dry ingredients to the wet ingredients. mix using a wire whisk until lumps free.

6)Pour 3/4 full of the batter to your lined molds and bake it for 10 minutes. After 10 minutes take out and add in the macapuno/buko toppings then put it back in and bake it for another 20 minutes or until toothpick inserted comes out clean.

Monay

  • 4 cups bread flour or all purpose flour
  • extra flour for dusting
  • 2 tsp instant yeast
  • 1/2 cup warm water
  • 1/2 cup warm milk
  • 1 large egg
  • 1/2 cup milk powder
  • 2/3 cup granulated sugar
  • 1 tsp salt
  • 4 tbsp or 1/4 cup softened  butter
For eggwash:
  • 1 large egg
  • 1 tbsp milk
Bake 350F in 20 minutes.

Star Bread

1 cup fresh milk 4 cups bread flour 1 packet of yeast 7-8 g 1/3 cup powdered milk 1/4 cup butter 3/4 cup sugar 1/4 tsp salt 1 egg For toppings: butter sugar

Bake 350F in 12-15 minutes.

Mongo Bread

Mongo Bread Recipe for the dough 3 1/2 cup bread flour 2/3 cup of lukewarm water 2/3 cup of milk 1/4 (56 g )sugar plus 1 tbs extra for the yeast 56 g or 1/4 cup melted butter 8 g or 2 1/4 tsp yeast 1 tsp of salt
Red Bean Paste
2 1/2 cup Adzuki beans 1 can condensed milk 1/2 cup sugar

Bahug- bahug/ Pan de Pula


Ingredients:
2 lbs Old bread cubes
1-14 oz can condensed milk
1 cup Granulated sugar
1 Tbsp Vanilla
Red food coloring
4 cups Milk
1/4 cup Heavy cream (optional)
1/2 tsp Salt
1/2 cup Unsalted butter/1 stick
4 Large eggs

Dough Ingredients:

3 cups Bread flour
1-1/4 cup Warm milk
1/4 cup Granulated sugar
1 Egg
1 egg yolks for egg wash
1 tbsp sesame seeds for the toppings

Procedure: (for the filling)

1) In a large bowl combine everything except for the bread, butter and food color

2) Once everything is well combine slowly pour it to the bread.

3) Cook the filling over medium high heat. Once the mixture is warm enough add in the butter and the food color.its up to you how intense your color. when the mixture has thicken up and no more liquids you can now turn the heat off. And start making the dough.

Procedure: (For the dough)

1) Add 1 tbsp of sugar to the warm milk then add the yeast set it aside until its  foam up.

2) Combine the flour and the sugar together.

3) Im using my bread machine to knead my dough. You can use your hand or stand mixer. Knead the dough until smooth and elastic.

4) Greased 9x13 baking pan. Roll out the dough right after you finish kneading make sure it enough to cover the top and the bottom of the baking pan.

5) Once you roll out the dough transfer it to the baking pan covering the bottom first. Add in the filling before covering the top make sure you level it by pushing it with hand or spatula.

6) Cover the top and pinched to sealed the tuck the side in. Using a fork poke some wholes all over and then brush it egg wash and sprinkle the sesame seeds.

7) Bake it at preheated oven 350F for 30 minutes or until the top gets golden brown.

8) let it cool down completely before slicing it.

Homemade White Bread

Recipe: 4 cups of lukewarm water (as warm as a baby's bottle) 1/2 cup white sugar
4 tablespoons of active dry yeast* 1 tablespoon of salt 5 tablespoons of oil lots of flour *note: 1 packet of yeast = 2 1/4 teaspoons (double check your packet), so 4 tablespoons = 12 teaspoons = 5 packets variations: oil: use vegetable, canola, olive, or anything else flour: all purpose (bleached or unbleached) or whole wheat (mix with all purpose 1:1) Bake bread in 375°F oven for 25 minutes. Specifically for ONE loaf it's: 1 cup lukewarm water 1/8 cup or 2 tbsp sugar
1 tablespoon (3 tsp) active dry yeast 3/4 tsp salt 1 1/4 tablespoons oil 2 cups flour (roughly)


This is the recipe of the latest 4 loaves of bread that I made:
Ingredients:
2 cups lukewarm water
4 tbsp white sugar
2 tbsp active dry yeast
1 1/2 tsp salt
2 1/2 tbsp oil
4 cups flour or more till dough is in right consistency

Directions: 
1. Mix the yeast and white sugar in 2 cups of water and set it for 10 minutes. 
2. Add the rest of the ingredients in the mixing bowl and mix it together. 
3. Pour a little flour in the working area and knead the dough. 
4. Rub oil in the mixing bowl and put the dough back and cover and let it rest for 1 hour.  
5. Pour a little flour on the working area and knead the dough again. 
6. Prepare the greased pan.
7. Put on the dough on the greased pan and cover it with towel and let it rest for 30 minutes.

8. Bake it for 375F in 25 minutes.


Ingredients

  • 6 to 61/2 Cups of Flour
  • 1 Cup of Sugar
  • 1/2 Teaspoon Vitamin C Vinegar or Apple Cider Vinegar
  • 1 Teaspoon of Salt
  • 3 Tablespoons of Butter
  • 2 Tablespoons of Yeast
  • 1 Cup of Water
  • 1 Cup of Milk
  • 2 Eggs

Instructions

  • Mix the Yeast and 1 Tablespoon of Sugar with half of a Cup of Water and allow the Yeast to Proof for 3 to 5 minutes.
  • Add all the ingredients and the proofed yeast (except the butter) inside the Mixing Bowl. Set the mixer to medium speed and begin to mix. 
  • After about 4 to 5 minutes of mixing the dough, turn off the mixer and add the butter. Then continue to mix for about 2 to 3 more minutes until the dough becomes elastic and pulls away from the sides of the Bowl.
  • Coat the dough as well as the Bowl with some Oil, cover it with a damp cloth and place it in a warm place to rise for 1 hour or until it doubled in size. I usually place mine in the Oven with the oven light on.
  • Now punch down the Dough. Don't over beat it.
  • Transfer it onto a floured work surface and divide the Dough into 4
  • Shape your Bread by first making it into a ball, then shape it into a loaf. You can also knead the dough into a rectangular shape with a rolling pin and then tightly roll it up (as you would a Mat) into a loaf.
  • Place the loaves into a greased pan and leave to rise for another 30 Minutes.
  • Place into a 350 degrees Fahrenheit preheated Oven and bake between 20 to 30 minutes.
  • Leave to cool for a couple of minutes and enjoy!

Notes

1-I added Vitamin C Powder. This can also be replaced with Vinegar. This acts as a preservative and it also creates an acidic environment which helps the Yeast to work better.
